a FALL fave! Snickers recipes we love!

Friday, November 1, 2024

How is it possible that today is FRIDAY and November 1?

While it’s hard to say good-bye to October’s beauty and fun,

we do love the depth and richness that November brings each year!

But, before we leave October behind,

Laurie is sharing a bit of the fun she and her extended family had

at this year’s Family BOO Bash!

Her family gathered last weekend for this annual event

and the autumn weather was stellar!

Family trick or treating in the backyard is always a hit with the Littles!

This year’s game of EEK!  BOO! was as competitive as ever!

And… look who showed up as the party was winding down!

 HO!  HO!  HO!

If you can believe it, the weather here in Minnesota was 80 degrees on Tuesday (!!!)

(a record!)

and yesterday (Thursday/Halloween) it snowed… typical!

Just in time for the trick-or-treaters, too!

Thankfully the snow is already melting

But it’s definitely a reminder of what’s to come!

In yesterday’s post, we shared some favorite Candy Games

that not only use up any Halloween treats you may have left over

but are also fun to play with people of all ages…

Perfect for any family gathering!

Today Laura is sharing two recipes….

Her favorite Halloween candy is the star ingredient in each!

Did you know that Snickers is considered

the best selling candy bar In the world

and that the annual global sales of this fave is over $380 million?

I guess I’m not in the minority when I say that Snickers is my candy bar of choice!

If  you love Snickers like I love Snickers,

check out the two recipes I’m sharing below!

They are simple to make and I love that they are a bar rather than a cookie.

Sometimes, I’m just not in the mood to wait for multiple batches to bake...

do you ever feel that way?

I made a quick batch of these once the trick-or-treating wrapped up last night

and these Snickers Cookie Bars are now packed,

ready for our trip to see our Littles this weekend!

INGREDIENTS

• 1/2 cup softened butter

• 1/2 cup brown sugar

• 1 egg

• 1 tsp vanilla

• 1 1/2 cups flour

• 1/2 tsp baking powder

• 1/4 tsp salt

• 10-12 small Snickers bars (we used the fun-size ones)

DIRECTIONS

Preheat the oven to 350 degrees.  Prepare an 8 x 8 pan by lining it with parchment paper.  I always add extra parchment to all the sides, as shown below, to make it easier when getting the bars out of the pan.  Spray the parchment lined pan lightly with cooking spray.

1.  Cream butter and brown sugar until light and fluffy (2-3 minutes).

2.  Beat in the egg and vanilla.

3. Add the flour, baking powder and salt to the egg mixture.  Mix until blended through.

4Chop up the Snickers bars into bite-size pieces. Fold the Snickers pieces into the batter.

5. Spoon the batter into your prepared 8 x 8 pan and bake for 25-30 minutes.

Cool and cut into squares.  Store at room temperature.

Have you ever had the popular Snickers Salad?

It’s made with Snickers bars, apples, whipped topping, marshmallows and pudding.

Well, this dip is reminiscent of that salad in some ways

BUT

I find it even more yummy!

This dip is a delicious accompaniment to apples during the fall season!

(If you’re hosting an upcoming gathering - perhaps a Book Club - your guests will love it!)

INGREDIENTS

NOTE:  Double this recipe if making it for a gathering!

• 6 fun-size Snickers bars, chopped into bite size pieces

• 8 oz cream cheese, softened

• 2 Tablespoons cup brown sugar

• 1/2  tsp vanilla

• 1/2 of an 8 oz container of Cool Whip

• apple slices and/or pretzel thins (for dipping)

DIRECTIONS

1.  Cream the cream cheese until fluffy.

2. Add the brown sugar and vanilla.  Cream again until blended and fluffy.

3. Fold in the Cool Whip and the Snickers pieces.  (Save a few pieces of the Snickers for garnish.)  Mix until combined.

4. Spoon the mixture into a serving bowl.  Garnish with the remaining Snickers pieces.

5. Cover and refrigerate for at least two hours if you will not serving the dip immediately.

6. Serve with sliced apples and/or pretzels (we included two kinds of apples and pretzel thins).  Graham crackers would be a great addition, as well!
